Singer, Songwriter and Multi-Talented Soca star Nadia Batson joins Joel in the kitchen to make this Geera Spiced Chicken Quinoa Salad


3 chicken breasts, boneless and skinless

Salt and black pepper

1 tsp green seasoning

Juice of ½ lime

½ tsp pepper sauce, optional

2 tbsp olive oil

1 large onion, diced

1 large zucchini, cut in chunks

10 – 12 fresh button or cremini mushrooms, cut in chunks

3 cloves garlic cloves, finely chopped

1 tsp turmeric powder

1 tsp smoked paprika or regular paprika

1 tsp ground cumin/geera

2 – 3 cups cooked quinoa

2 medium tomatoes, diced

1 tbsp chopped thyme and shadon beni


  1. Cut the chicken breasts in chunks. Season with salt, pepper, lime juice, green seasoning and pepper sauce if using. Let marinate for a least half hour.
  2. Heat the olive oil in a large saute pan over medium high heat. Add the onions and cook for 1 minute. Add the chicken breasts and mix into the onions. Add the turmeric powder, the cumin. Stir well.
  3. Add the zucchini and mushrooms. Mix into the chicken. Season with a little salt and pepper. Add the paprika. Continue to cook for a few minutes until the vegetables are almost cooked.
  4. Add the quinoa, tomatoes and fresh herbs. Mix well. Season with a little more salt and pepper and spices. Taste and adjust seasoning if necessary. Let heat through and serve.
