CHEESY MASH POTATO MEDLEY – Dionne Baptiste-Clarke

Dionne Baptiste-Clarke, mom of young published author Coryn Anaya Clarke is sharing one of her quick and easy "Coryn friendly" recipes on Cup of Joe Caribbean.


2 large Irish potatoes

1 large sweet potato

¼ cup evaporated milk

2 oz butter

½ cup grated cheddar cheese

Salt and pepper

Extra grated cheese

Chopped fresh parsley


  1. Boil the Irish potatoes and sweet potatoes until cooked. Peel and cut into chunks.
    Place in a large bowl.
  2. Add the butter, milk, salt, and black pepper.
  3. Using a potato masher or fork, mash the ingredients together until the potatoes are smooth. Taste and adjust seasoning if necessary.
  4. Scoop a serving of the potatoes onto a plate. Sprinkle a little grated cheese on top. Place in the microwave and melt the cheese. Sprinkle with the fresh parsley and serve.
