ITALIAN BREADED FRIED FISH ft Alison Hinds


Ingredients
1 pk flying fish fillets
1 pk shark fillets
Salt and Black pepper
Juice of 2 limes
2 tbsp Italian seasoning
Breading
1½ cups panko breadcrumbs
1 cup grated Parmesan cheese
2 tsp dried basil
2 tsp dried thyme
2 tsp oregano
2 – 3 cloves garlic, minced
Salt and pepper
3 oz butter melted
Oil for shallow frying
Directions
- Rinse the flying fish and shark fillets in lime water and pat dry.
- Season the fish with the Italian seasoning, salt, black pepper and a little lime juice. Let marinate for approximately ½ hour.
- Make the breading. Add the breadcrumbs, Parmesan cheese, basil, thyme, oregano, garlic, salt and black pepper in a bowl. Mix well.
- Heat the oil in a large frying pan over medium high heat.
- Brush the fillets on both sides with melted butter. Dip each fillet in the breading mixture ensuring that the fillet is evenly coated.
- Fry in batches in the hot oil, 2 – 3 minutes on each side. The shark will take a little longer based on thickness.
- Remove from oil and drain on a paper towel. Serve.
