2 packs Knorr Ramen Noodles, Shrimp Flavor

12 – 15 cooked large shrimp

1 cup chopped fresh mushrooms

1 cup chopped broccoli

1 small carrot, thinly sliced

½ cup sliced water chestnuts

½ small onion, chopped

2 tbsp oil

For the dressing:

¼ cup light soy sauce

3 tbsp rice wine vinegar

1 tbsp minced fresh ginger

1 tbsp chili garlic paste

1 tbsp oyster sauce

2 tbsp sesame oil

1 tbsp minced shadon beni

2 blades chives, thinly sliced

  1. Cook the Knorr Ramen Noodles as directed without the seasoning pack. Drain and set aside.
  2. Heat the oil in a large sauté pan. Add the onions and cook for a few seconds. Add the carrots, broccoli and mushrooms and let cook for a few minutes. Sprinkle the vegetables with just half of the seasoning pack from the Knorr Ramen Noodles. Add the water chestnuts and mix well. Once the vegetables are cooked through, remove from heat.
  3. While the vegetables are cooking, combine all the ingredients for the dressing together.
  4. In a large bowl, add the vegetables and cooked shrimp and spoon a little of the dressing over the mixture and mix well. Add the cooked Knorr Ramen Noodles along with a little more of the dressing. Toss together, ideally with a pair of tongs. Taste and adjust flavor if necessary. Serve.
