BAKED CHICKEN CACCIATORE ft Fridge

Enjoy all the flavors in this baked version of the classic dish.

Ingredients

8 – 10 pieces of chicken, cleaned, rinsed, skin removed

2 tbsp dried Italian seasoning

Salt and black pepper

½ tsp cayenne pepper or pepper sauce

2 tbsp soy sauce

Juice of ½ lime

8 – 10 white button mushrooms, quartered

2 medium sweet peppers, seeded and chopped

1 onion, peeled and chopped

3 – 4 cloves garlic, thinly sliced

SAUCE

1 can diced tomatoes

½ cup red wine

¾ cup tomato sauce

1 tsp dried oregano

Salt and black pepper

Directions

  1. Season the chicken with Italian seasoning, lime juice, salt, black pepper, soy sauce and pepper sauce or cayenne pepper. Let marinate for at least 2 hours to overnight.
  2. Preheat oven to 375 degrees F.
  3. Mix together the tomatoes, tomato sauce, red wine, oregano and salt and pepper.
  4. Lightly spray a large baking dish with cooking spray. Place the chicken pieces in an even layer in the dish. Add the vegetables, over and in between the chicken pieces.
  5. Pour the tomato wine sauce over the chicken and vegetables.
  6. Bake in the preheated oven for 45 – 55 minutes or until the chicken is cooked and tender. Serve with rice or pasta.
