BAKED CHICKEN CACCIATORE ft Fridge

Enjoy all the flavors in this baked version of the classic dish.

Ingredients
8 – 10 pieces of chicken, cleaned, rinsed, skin removed
2 tbsp dried Italian seasoning
Salt and black pepper
½ tsp cayenne pepper or pepper sauce
2 tbsp soy sauce
Juice of ½ lime
8 – 10 white button mushrooms, quartered
2 medium sweet peppers, seeded and chopped
1 onion, peeled and chopped
3 – 4 cloves garlic, thinly sliced
SAUCE
1 can diced tomatoes
½ cup red wine
¾ cup tomato sauce
1 tsp dried oregano
Salt and black pepper
Directions
- Season the chicken with Italian seasoning, lime juice, salt, black pepper, soy sauce and pepper sauce or cayenne pepper. Let marinate for at least 2 hours to overnight.
- Preheat oven to 375 degrees F.
- Mix together the tomatoes, tomato sauce, red wine, oregano and salt and pepper.
- Lightly spray a large baking dish with cooking spray. Place the chicken pieces in an even layer in the dish. Add the vegetables, over and in between the chicken pieces.
- Pour the tomato wine sauce over the chicken and vegetables.
- Bake in the preheated oven for 45 – 55 minutes or until the chicken is cooked and tender. Serve with rice or pasta.
