8 pieces of chicken,(ideally breasts and thighs)

1 tsp salt

1/2 tsp black pepper

Juice of 1 small lime

1 tbsp chopped green seasoning

Honey Mustard Marinade:

2 tbsp Dijon mustard or regular mustard (you can mix the two)

1 tsp minced garlic

½  cup honey (we used Herbwai Honey)

¼ cup rice wine vinegar

1 tbsp chopped thyme and rosemary

½ tsp paprika

½ tsp red pepper flakes or pepper sauce

Salt and pepper

Cooking spray


  1. Clean and wash the chicken parts. Remove the skin. Make one or two slashes in the chicken. Spray a baking dish lightly with cooking spray.
  2. Place the chicken in the greased dish. Season the chicken with the salt, pepper, green seasoning and lime juice. Let marinate for at least ½ hour or more.
  3. Mix together the ingredients for the honey mustard marinade. You can taste the mixture and adjust the seasoning if necessary. Pour over the chicken, ensuring the both sides are coated with the sauce. Cover with foil and let marinade for at least 1 hour.
  4. Preheat the oven to 375 degrees F.
  5. Bake covered in preheated oven for approximately 25 minutes. Remove the foil and continue baking for another 15 – 20 minutes until the chicken is cooked through.
  6. Remove and serve.
