BAKED PARMESAN YOGURT CHICKEN

An easy, flavorful chicken dish using a yogurt based marinade.

Ingredients

4 chicken breasts, boneless and skinless

½ cup Guiltless Low Fat Plain Yogurt 

2 tbsp mayonnaise

1/2 cup grated parmesan cheese

1 tbsp minced garlic

1 tsp green seasoning

1 tsp salt

½  tsp black pepper

Few dashes pepper sauce, optional

Chopped fresh parsley or chadon beni for garnish

Directions

  1. In a medium bowl, mix together the Guiltless Low Fat Plain Yogurt, mayonnaise, Parmesan cheese, garlic, green seasoning, salt, pepper and pepper sauce if using.
  2. Add chicken into the bowl with yogurt mixture and make sure the chicken is coated with the marinade. Leave for at least 1 hour to marinate or refrigerated up to overnight.
    Let chicken come to room temperature if refrigerated before cooking.
  3. Preheat oven to 375°F. Lightly coat a baking dish with a little olive oil or a light coating of cooking spray.
  4. Place the chicken in the baking dish. The chicken should be thinly coated with the yogurt mixture. Don't put too much or any additional mixture leftover.
  5. Bake for 25-30 minutes, or until the chicken is cooked through, based on the thickness of the breasts. Turn up the heat to broil and let chicken broil for 2-3 minutes until lightly browned on top.
  6. Remove and let rest for 1 – 2 minutes. Slice diagonally, sprinkle with fresh herbs and serve.
