BANANA NUT BREAD ft Zaak & Chef Simmone

Joel makes this nutty banana bread for guests Chef Simmone Edwin and Zaak Mustapha


4 large bananas (or 5 small bananas)

½ cup unsalted butter melted

 cup granulated sugar

2 large eggs room temperature

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

1 teaspoon cinnamon

¼ teaspoon salt

3/4 cup Regal chopped nuts (almonds, pecans or walnuts) tossed in a little flour


  1. Preheat the oven to 350°F: lightly grease a 9×5 inch loaf pan and set aside.
  2. In a large mixing bowl mash the bananas with a fork or a potato masher.
  3. Add the melted butter to the bananas and whisk until combined. Add the sugar, eggs and vanilla extract and mix well.
  4. Add the dry ingredients and mix gently into the wet ingredients just until combined.
  5. Add the combination of chopped Regal Nuts and fold in using a spatula. Pour the batter into the prepared loaf pan.
  6. Bake at 350°F for about 60 minutes or until a toothpick inserted in the center comes out clean. Take it out of the oven and let sit on the counter for about 5-10 minutes. Then transfer to a wire rack and let it cool completely before slicing.
