Bene Balls

Joel gets a lesson in Tobago from Blue Food queen, Yzanne Williams Chance in making Bene Balls


¾ cup brown sugar  

1½ cups sesame sesame seeds

½ teaspoon grated nutmeg


  1. Place the sesame seeds in a large frying pan or pot and cook until golden brown and crunchy (parched). Remove from heat.
  2. Place sugar in a pot and melt completely on low heat, stirring constantly: do not burn.
  3. Add sesame seeds and nutmeg: combine together. Using a teaspoon, place mixture on hand greased with oil and roll to desired sizes and shapes. Please note that mixture is very hot and must be rolled hot.
  4. Place on a plate or sheet to cool. Serve.
