Black Bean Quinoa Stir Fry – Fitness Chef Charlene Procope-Delph


2 cups cooked quinoa
1 cup shredded cabbage
1 cup thinly sliced carrots
1 cup thinly sliced bell peppers
3 cloves garlic, diced
1 tbsp grated ginger
1 can black beans, drained and rinsed
1 tsp soy sauce
1 tbsp sesame oil


  1. Heat sesame oil in a large saute pan over medium high heat.
  2. Add the ginger and garlic and saute for a few seconds.
  3. Add the carrots, cabbage and sweet peppers. Stir fry for a few minutes until the vegetables begin to cook through.
  4. Add the soy sauce and mix.
  5. Add the quinoa and black beans. Mix in until well combined and heated through.
  6. Remove from heat and serve hot.
