Black Bean Quinoa Stir Fry – Fitness Chef Charlene Procope-Delph

Ingredients
2 cups cooked quinoa
1 cup shredded cabbage
1 cup thinly sliced carrots
1 cup thinly sliced bell peppers
3 cloves garlic, diced
1 tbsp grated ginger
1 can black beans, drained and rinsed
1 tsp soy sauce
1 tbsp sesame oil
Directions
- Heat sesame oil in a large saute pan over medium high heat.
- Add the ginger and garlic and saute for a few seconds.
- Add the carrots, cabbage and sweet peppers. Stir fry for a few minutes until the vegetables begin to cook through.
- Add the soy sauce and mix.
- Add the quinoa and black beans. Mix in until well combined and heated through.
- Remove from heat and serve hot.
