BLACK EYE PEAS SALSA

Ingredients

2½ cups cooked Regal Black Eye Peas

½ cup diced red onion

2 tomatoes diced

1 cup whole kernel corn

1 tbsp diced jalapeno pepper

4 – 5 cloves garlic, minced

3 – 4 blades shadon beni, finely chopped

¼ cup lime

Salt and black pepper to taste

Directions

  1. Mix all the ingredients together in a bowl.
  2. Taste and adjust seasoning if necessary. Refrigerate for ½ hour for flavours to blend.
  3. Serve with chips of choice.
