BOOZY OAT MUFFINS

Joel makes these easy boozy muffins for his guests Rico DG and his son Sergio with an array of Regal products.

Ingredients
1 cup Regal Old-fashioned Instant Quick Oats
1 cup milk
2 tsp vinegar
1 cup all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup sugar
1 egg beaten
¼ cup vegetable oil
¾ cup Regal Raisins
½ cup rum
1/2 cup Regal Granola
Directions
- Place the raisins in a bowl and add the rum. Add enough rum to just cover the raisins. Cover and set aside to soak ideally for a few hours or overnight.
- Preheat the oven to 400℉. Line a muffin tray with paper liners.
- Add the vinegar to the milk and set aside for 1 minute to curdle. Mix together the Regal Oats with the milk and leave for the oats to absorb the milk.
- Meanwhile in a large bowl, combine the flour, baking powder, baking soda, salt and sugar. Mix well.
- Add beaten egg, oil to the oat mixture and mix together. Add oat mixture all at once to the flour mixture. Stir just until combined.
- Gently fold in the soaked raisins.
- Spoon into the muffin tins filling them about 2/3 full. Fill muffin liners 3/4 full. Sprinkle a little granola over the top of each muffin.
- Bake in the preheated oven for 15-20 minutes or until risen and golden brown. Remove from the oven and take out the muffins, placing them on a wire rack for a few minutes. Serve warm or at room temperature.
