Cheese Pimento Shortbread Crackers

2 cups shredded cheese eg sharp cheddar or Parmesan

1 ½ cups Good N Natural Cracked Wheat Flour 

5 pimento peppers

1 tbsp cornstarch

½ tsp salt

½ tsp mustard powder

¼ tsp black pepper

1/2 cup cold unsalted butter, cut into cubes

5 tbsp water


  1. Place cheese, Good N Natural Cracked Wheat Flour, cornstarch, salt, mustard powder, black pepper, pimento in a food processor and process until completely combined.
  2. Add butter to mixture process until mixture is crumbly, while food processor is running gradually add the water until the mixture forms a ball.
  3. Remove dough from food processor and divide rolling each piece into a log, wrap in plastic wrap and chill for at least 1 hour.
  4. Preheat oven to 350 degree F.
  5. Slice logs approximately 1/8 inch thick rounds. Place on a lined cookie sheet.
  6. Bake for approximately 15 minutes or until the edges are golden brown, remove from the oven and transfer to a cooling rack.
