CHEESY BEET & POTATO PIE ft BLAXX

Joel makes this lactose free friendly dish with Anchor's Zero Lacto Cheddar Cheese for celebrity guest BLAXX.

Ingredients

8 – 10 potatoes, peeled and cut into chunks

2 oz Anchor Unsalted Butter

¼ cup milk

Salt and black pepper

1½ cups grated Anchor Specialty Range Zero Lacto Cheddar Cheese

1 medium beet or 2 small beets, cooked (boiled or roasted)

Extra grated cheese for top

¼ cup breadcrumbs

Cooking spray

Directions

  1. Place the potato chunks in a large pot of water and bring to a boil. Cook just until the potatoes are tender. Drain.
  2. Preheat oven to 375 degrees F. Lightly spray or grease a baking dish with cooking spray or butter.
  3. Place the hot potatoes in a large bowl. Add the Anchor Unsalted Butter, milk, a generous pinch of salt and black pepper. Mash with a potato masher or fork until fairly smooth.
  4. Add the grated Anchor Specialty Range Zero Lacto Cheddar Cheese and mix into the mashed potatoes.
  5. Peel the beets and grate finely. Add to the cheese and potato mixture. Mix well. At this point you can taste and adjust seasoning. Place the mixture in the prepared baking dish, spreading evenly with a spatula for a smooth top. Sprinkle with the extra grated cheese and breadcrumbs.
  6. Bake in the preheated oven for approximately 20 minutes or until the top is golden brown. Remove and let sit for 5 minutes before cutting and serving.
