CHEESY OCHRO & MUSHROOM BRUSCHETTA

Try these cheesy bites that Joel made for Jus Jase and friends for his live music set series!

Ingredients

1½ cups sliced fresh button mushrooms

10  – 12 ochroes, head and ends removed, sliced into thin rounds

1 – 2 large sweet peppers, seeded and diced

1 small onion, diced

4 – 5 cloves garlic, minced

1 tsp green seasoning

½ tsp smoked paprika

½ tsp chili powder

1 tsp all purpose seasoning

Large pinch red pepper flakes or few drops of pepper sauce

Salt and pepper to taste

1 oz butter

1 – 2 tbsp oil

6 oz cheddar cheese, grated

1 – 2 large baguettes, diagonally cut into thin slices

Directions

  1. Heat oil and butter in a saucepan over medium high heat. Add the onions and let cook for 1 – 2 minutes.
  2. Add the ochroes, pressing into an even layer in the pan and cook for a few minutes. Add the mushrooms and peppers and mix into the ochroes. Continue to cook for 1 – 2 minutes.
  3. Add the garlic, green seasoning. Stir in to the ochroes. Add the paprika, chili powder, all-purpose seasoning, coriander, salt and black pepper. Mix well. Add a little water, just to deglaze the pan, cover and cook until the ochroes are cooked through and soft. Taste and adjust seasoning if necessary.
  4. Preheat the oven to 400 degrees F.
  5. Place the bread slices on a baking sheet that has been lightly drizzled with a little olive oil or lightly sprayed with cooking spray. Top each slice with the ochro /mushroom mixture, then sprinkle with grated cheese.
  6. Bake in the oven for 5 – 10 minutes or until the cheese is melted and edges are crisp.
  7. Remove and serve immediately.
