CHEESY PROVISION & VEGETABLE PIE – ZIGGY RANKIN

Ingredients
FOR THE DASHEEN LAYER
2 large dasheen, washed
2 oz butter
1/3 cup milk,
Salt and black pepper
1 tbsp fresh green seasoning
FOR THE SWEET POTATO LAYER
3 – 4 large sweet potatoes, washed
2 oz butter
1/3 cup milk,
Salt and black pepper
2 tbsp fresh green seasoning
FOR THE VEGETABLE MIX
1 bunch of kale, chopped
1 small onion, diced
2 – 3 cloves garlic
1 can whole kernel corn, drained
2 – 3 medium tomatoes, diced
1 tbsp green seasoning
Salt and black pepper to taste
2 – 3 drops of pepper sauce
1 cup crumbled feta cheese
1 – 2 tbsp oil
1 – 1½ cups grated cheddar cheese
Directions
- FOR THE DASHEEN AND SWEET POTATO;
Place the provisions in a large pot of water and bring to a boil. Let cook until they are cooked. Depending on the size of the provisions, check intermittently as some may cook faster than others. - Remove and place in a colander. When able to handle, peel the dasheen and sweet potatoes and place in separate bowls. Cut each provision into chunks and add the respective measurements of butter, milk, green seasoning and a dash of salt and pepper. Using a potato masher or fork, mash the ingredients together until well blended. The provision mixtures do not need to be entirely smooth. It helps if the provisions are still warm. Taste and adjust seasoning if necessary.
- FOR THE VEGETABLE MIX
Heat oil in a large saucepan over medium high heat. Add the minced garlic and onion and cook for 1 minute being careful not to let the garlic burn. Add the kale and cook for 1 – 2 minutes. Add the tomatoes and corn. Mix into the kale. Add the green seasoning, salt, black pepper and pepper sauce. Mix well. Cover and let cook just for a few minutes. Mix in the feta cheese and remove from heat. - Preheat oven to 375 degrees F.
- TO ASSEMBLE
In a lightly greased baking dish, spread the mashed dasheen mixture to cover the bottom of the dish. Place the vegetable and feta mixture evenly on top of the dasheen. Top with the sweet potato mixture, evenly covering the vegetable mixture. Sprinkle with the grated cheddar cheese.
- Bake in the preheated oven for 25 – 30 minutes or until the cheese is melted and golden brown. Remove from oven and let rest for 5 minutes before cutting and serving.
