Joel and Jus Jase make these simple but potent Rum Balls perfect as a Christmas snack.
1 cup chocolate chips, semi-sweet
½ cup Regal Icing Sugar
1 tsp vanilla essence
2 tbsp golden syrup or corn syrup
Pinch of salt
½ cup rum
2 cups crushed vanilla wafers
1 cup Regal Whole Almonds
1 additional cup Regal Icing Sugar
Toast the Regal Almonds just until lightly browned. Place in a food processor and pulse until finely crushed.
Place the chocolate chips in a large bowl and microwave until melted (stirring intermittently). When melted and smooth, add the Regal Icing Sugar and mix into the chocolate. Add the rum, vanilla essence, golden syrup and salt. Mix well until everything is combined.
Mix together the crushed vanilla wafers and the crushed Regal Almonds. Add to the chocolate mixture and combine. Cover and refrigerate for half hour.
Remove and using a spoon, scoop mixture and shape into even sized balls. You can rub a little oil on the palm of your hands to make rolling easier. Place the additional Regal Icing Sugar in a shallow bowl. Roll the shaped balls in the icing, ensuring they are completely and evenly covered. Place in a serving bowl and enjoy.
