CHRISTMAS LEMON LOAF – Susan Samlal

Ingredients
1½ cups of all purpose flour
11/2 tsp of Regal Baking Powder
1 tbsp of lemon zest
I /2 tsp salt
1/2 cup of butter, room temperature
1 cup Regal Caster Sugar
2 eggs
1 tsp vanilla
1/2 cup of milk
Lemon Icing
1 cup Regal Icing Sugar
1.5 tbsp lemon juice
1 tbsp of water
Directions
- Preheat oven at 350 degrees F. Grease a loaf pan and line with parchment paper and set aside.
- In a medium bowl combine flour, Regal Baking Powder, lemon zest and salt and set aside.
- Cream the butter and Regal Castor Sugar on medium high until light and fluffy.
With the mixer on low speed add in the eggs one at a time , then beat in the vanilla. - Add in the flour mixture and alternate with milk.
- Pour batter in loaf pan and bake for 45=55 minutes until golden brown.
- Let the cake cool and then frost with lemon icing.
- For the lemon icing, mix the ingredients together until smooth. Use as desired.
