1½ cups of all purpose flour

11/2  tsp of Regal Baking Powder

1 tbsp of lemon zest

I /2 tsp salt

1/2 cup of butter, room temperature 

1 cup Regal Caster Sugar

2 eggs

1 tsp vanilla

1/2 cup of milk

Lemon Icing

1 cup Regal Icing Sugar

1.5 tbsp lemon juice

1 tbsp of water


  1. Preheat oven at 350 degrees F. Grease a loaf pan and line with parchment paper and set aside.
  2. In a medium bowl combine flour, Regal Baking Powder, lemon zest and salt and set aside.
  3. Cream the butter and Regal Castor Sugar on medium high until light and fluffy.
    With the mixer on low speed add in the eggs one at a time , then beat in the vanilla.
  4. Add in the flour mixture and alternate with milk.
  5. Pour batter in loaf pan and bake for 45=55 minutes until golden brown.
  6. Let the cake cool and then frost with lemon icing.
  7. For the lemon icing, mix the ingredients together until smooth. Use as desired.
