CITRUS STEAK TACOS

Joel makes these simple and satisfying steak tacos with a citrus kick, using Linz Flank Steaks from Malabar Farms.


Ingredients
1 Linz flank steak, thawed
Salt and black pepper
2 tbsp oil
Marinade:
2 tbsp olive oil
¼ cup orange juice
Juice of 1 lime
2 – 3 cloves garlic, minced
½ tsp ground geera or cumin
6 – 8 soft tortilla wraps or taco shells
Chopped lettuce
Salsa (we used a corn salsa)
Grated cheddar cheese
Sour cream
Directions
- Season the Linz flank steak with salt and black pepper.
- Mix together the ingredients for the marinade. Place the Linz flank steak in the marinade and let marinate at least 2 hours or up to overnight.
- Heat oil in a large saute pan over high heat.
- Remove steak from marinade. Add the steak and let sear on one side for 2 – 3 minutes for medium. Flip onto the other side and cook on that side for another 3 minutes based on preferred doneness. Cook longer for medium well to well done.
- Remove and let the steak rest for a few minutes. Slice the steak across the grain into thin slices.
- Assemble the tacos. Place some lettuce in the shells. Add a few slices of steak, followed by the grated cheese and salsa. Top with a little sour cream. Serve and enjoy.
