CITRUS STEAK TACOS

Joel makes these simple and satisfying steak tacos with a citrus kick, using Linz Flank Steaks from Malabar Farms.

 

Ingredients

1 Linz flank steak, thawed

Salt and black pepper

2 tbsp oil

Marinade:

2 tbsp olive oil

¼ cup orange juice

Juice of 1 lime

2 – 3 cloves garlic, minced

½ tsp ground geera or cumin

6 – 8 soft tortilla wraps or taco shells

Chopped lettuce

Salsa (we used a corn salsa)

Grated cheddar cheese

Sour cream

Directions

  1. Season the Linz flank steak with salt and black pepper.
  2. Mix together the ingredients for the marinade. Place the Linz flank steak in the marinade and let marinate at least 2 hours or up to overnight.
  3. Heat oil in a large saute pan over high heat.
  4. Remove steak from marinade. Add the steak and let sear on one side for 2 – 3 minutes for medium. Flip onto the other side and cook on that side for another 3 minutes based on preferred doneness. Cook longer for medium well to well done.
  5. Remove and let the steak rest for a few minutes. Slice the steak across the grain into thin slices.
  6. Assemble the tacos. Place some lettuce in the shells. Add a few slices of steak, followed by the grated cheese and salsa. Top with a little sour cream. Serve and enjoy.
