Joel uses the convenience of Betty Crocker to make this twist on regular pancakes.


2½ cups Betty Crocker Complete Pancake Mix

1 cup coconut milk

1 cup saltfish buljol

Oil for frying


  1. Place the Betty Crocker Pancake Mix in a bowl.
  2. Add the coconut milk and mix well until smooth. Mix in the saltfish buljol.
  3. Heat a little oil in a frying pan or griddle over medium high heat.
  4. Place 2 to 3 large spoonfuls of pancake batter in the hot pan and cook for about 1 minute or just until the edges begin to brown. Flip and finish cooking on the other side. Remove and place on a platter. Repeat with remaining batter. Serve as desired
