Creamy Turkey Alfredo

Perfect for some leftover Christmas turkey.
Ingredients
2 cups diced cooked turkey
3 oz butter
3 cloves garlic, diced
1 tbsp fresh green seasoning
2 cups heavy cream
1 ½ cups parmesan cheese
1½ cups sliced fresh mushrooms
Salt and pepper to taste
½ tsp cayenne pepper (optional)
1 lb fettuccine
Fresh chopped chives and diced fresh tomatoes
Directions
- Cook the fettuccine in boiling water. Drain and set aside.
- In a saucepan, heat butter over medium high heat. Add the mushrooms and saute for approximately 2 – 3 minutes until tender.
- Add the garlic and cook for a further minute.
- Add the cream and stir well. Add the Parmesan cheese, green seasoning and cayenne (if using) and stir. Let simmer for 5 minutes, stirring often. The sauce will begin to thicken a little. Taste and adjust seasonings. More cream or cheese may be added to your taste and sauce thickness.
- Add the turkey and mix well into the sauce. Add the cooked fettuccine. Mix well to combine.
- Place the pasta into the serving bowls and sprinkle with chopped parsley and diced tomatoes. Serve immediately.
