Creamy Turkey Alfredo

Perfect for some leftover Christmas turkey.

2 cups diced cooked turkey

3 oz butter

3 cloves garlic, diced

1 tbsp fresh green seasoning

2 cups heavy cream

1 ½ cups parmesan cheese

1½ cups sliced fresh mushrooms

Salt and pepper to taste

½ tsp cayenne pepper (optional)

1 lb fettuccine

Fresh chopped chives and diced fresh tomatoes

  1. Cook the fettuccine in boiling water. Drain and set aside.
  2. In a saucepan, heat butter over medium high heat. Add the mushrooms and saute for approximately 2 – 3 minutes until tender.
  3. Add the garlic and cook for a further minute.
  4. Add the cream and stir well. Add the Parmesan cheese, green seasoning and cayenne (if using) and stir. Let simmer for 5 minutes, stirring often. The sauce will begin to thicken a little. Taste and adjust seasonings. More cream or cheese may be added to your taste and sauce thickness.
  5. Add the turkey and mix well into the sauce. Add the cooked fettuccine. Mix well to combine.
  6. Place the pasta into the serving bowls and sprinkle with chopped parsley and diced tomatoes. Serve immediately.
