CURRY BUTTERED FISH ft Denyse Plummer & Michelle Sylvester

Try this flavourful dish that Joel made for gospel artists Denyse Plummer and Michelle Sylvester


4 large slices kingfish or other firm fleshed fish

Salt and black pepper

4 oz butter, softened

2 cloves garlic, minced

1 tsp green seasoning

1 tbsp curry powder

1 tsp geera powder

2 – 3 blades shadon beni, finely chopped

Juice of 1 lime


  1. Season the fish slices with a little salt and black pepper. Let marinate for ½ hour.
  2. Mix together the butter, green seasoning, shadon beni, garlic, geera and curry powder.
  3. Drizzle the lime juice over the fish.
  4. Preheat the oven to 400 degrees F.
  5. Spread the butter evenly over one side of the fish and place (butter side up) in a greased baking dish.
  6. Bake in the preheated oven for 10 – 15 minutes depending on the thickness of the fish. Serve.
