Joel makes these easy melt in your mouth cookies inspired by a favorite childhood biscuit.
2 cups all purpose flour
¾ cup Regal Icing Sugar
½ cup Regal Custard Powder
Pinch of salt
6 oz butter or margarine, room temperature
1 tsp vanilla essence
Preheat oven to 350 degrees F. Lightly grease a baking sheet with butter.
In a mixing bowl of the electric mixer, combine the flour, salt, Regal Custard Powder and Regal Icing Sugar.
Add the softened butter and vanilla essence and mix together using the paddle attachment just until the dough is formed. If the dough is too sticky add a touch more flour. If too dry add a little more butter or a little milk. The dough should be smooth and just hold together.
Form the dough into small even sized balls and place on the greased baking sheet, leaving a little space in between. Press down the balls with a fork.
Bake in the preheated oven for 10 – 15 minutes depending on the size of the cookies. They should be just starting to brown on the edges.
Remove and cool on a wire rack. Dust with a little Regal Icing Sugar and serve.
