8 oz butter, softened

½ cup Regal Icing Sugar

1¼ cup all-purpose flour

½ cup Regal Cornflour

1 tbsp lemon zest

1 tsp vanilla essence


3/4 cup Regal Icing Sugar

1 – 1½ tbsp lemon juice


  1. Preheat the oven to 350 degrees F. Lightly spray a baking sheet with cooking spray.
  2. In a large bowl, beat together the butter and Regal Icing Sugar with an electric mixer on medium speed.
  3. Add the flour, Regal Cornflour, lemon zest, and vanilla and mix well.
  4. Using a tablespoon, scoop a bit of the dough and roll into a ball. Place on the baking sheet and lightly press down to flatten. Repeat with remaining dough.
  5. Bake in the preheated oven for 10 – 12 minutes, or until edges are lightly browned. Allow the cookies to rest for 2 minutes and then transfer to a wire rack to cool completely.
  6. For the icing, whisk together the icing sugar and lemon juice in a small bowl. If the mixture is too thick, add more lemon juice. If it’s too thin, add powdered sugar to thicken.
  7. Drizzle with the icing and let set. Serve and enjoy.
