EASY QUINOA BOWLS

Made for De Panman, Joshua Regrello on Cup of Joe Caribbean

Ingredients
1 cup Regal Quinoa
1 cup cooked Regal Channa
½ red onion, diced
7 – 9 cherry tomatoes, halved
2 – 3 hard-boiled eggs, peeled and chopped
½ cup whole kernel corn
Dressing of choice (we used a creamy garlic sauce)
Directions
- Layer the cooked Regal Quinoa in a serving bowl, heaping some of the quinoa on one side.
- Arrange the Regal Channa, hard boiled eggs, red onions, corn and tomatoes in sections over the quinoa, leaving some of the quinoa exposed.
- Drizzle with dressing and serve.
