EASY QUINOA BOWLS

Made for De Panman, Joshua Regrello on Cup of Joe Caribbean

Ingredients

1 cup Regal Quinoa

1 cup cooked Regal Channa

½ red onion, diced

7 – 9 cherry tomatoes, halved

2 – 3 hard-boiled eggs, peeled and chopped

½ cup whole kernel corn

Dressing of choice (we used a creamy garlic sauce)

Directions

  1. Layer the cooked Regal Quinoa in a serving bowl, heaping some of the quinoa on one side.
  2. Arrange the Regal Channa, hard boiled eggs, red onions, corn and tomatoes in sections over the quinoa, leaving some of the quinoa exposed.
  3. Drizzle with dressing and serve.
