EGGS WITH A CREAMY SPICY VEGETABLE SAUCE

Ingredients
6 hard boiled eggs
½ small onion, chopped
1 cup sliced fresh mushrooms
1 small sweet pepper, chopped
1 medium tomato, diced
¼ tsp salt
¼ tsp black pepper
½ tsp paprika
½ tsp all purpose seasoning
¼ tsp cayenne pepper
1 cup heavy cream
2 tbsp olive oil
Fresh parsley to garnish
Directions
- Heat oil in a frying pan over medium heat.
- Add the onions and cook for a few minutes.
- Add the sweet peppers and mushrooms and let cook until tender.
- Add the tomatoes, salt, black pepper, paprika, cayenne and all purpose seasoning.
- Add the cream and stir well. Let heat through until cream starts to bubble. Lower heat. Sauce will begin should thicken. Taste and adjust seasoning.
- Slice eggs in half and place cut side up in a serving dish. Spoon sauce over the eggs.
- Sprinkle with fresh parsley and serve immediately.
