3 sausages (we used Del Mano Sausages), sliced

1 large onion, diced

3 cloves of garlic, chopped

1 tbsp geera powder

1 tsp garam masala

1 tsp coriander

Salt and black pepper

1 (15oz) can black beans, drained and rinsed

1 (15oz) can chickpeas, drained and rinsed

1 (15oz) can red beans, drained and rinsed

1 (15oz) can diced tomatoes

1 large sweet pepper, seeded and diced

1 cup water or stock (beef or chicken)

2 tbsp oil


  1. Heat the oil in a large saucepan. Add the sausages and brown for 1 – 2 minutes on either side. Remove and set aside.
  2. In the same pan, add the geera, coriander and garam masala to the pot. Cook for 1 minute. Add the onions and peppers. Season with a little salt and pepper. Let cook just until the onions are translucent. Mix in the garlic.
  3. Add the sausages back into the pan with the vegetables.
  4. Add the diced tomatoes and tomato sauce. Mix well. Stir in the water or stock.
  5. Let cook over high heat for approximately 5 minutes, then reduce heat, cover and cook for another 10 – 15 minutes. Taste and adjust seasoning if necessary. Serve with rice or pasta.
