GEERA SPICED SAUSAGE & BEAN STEW

Ingredients
3 sausages (we used Del Mano Sausages), sliced
1 large onion, diced
3 cloves of garlic, chopped
1 tbsp geera powder
1 tsp garam masala
1 tsp coriander
Salt and black pepper
1 (15oz) can black beans, drained and rinsed
1 (15oz) can chickpeas, drained and rinsed
1 (15oz) can red beans, drained and rinsed
1 (15oz) can diced tomatoes
1 large sweet pepper, seeded and diced
1 cup water or stock (beef or chicken)
2 tbsp oil
Directions
- Heat the oil in a large saucepan. Add the sausages and brown for 1 – 2 minutes on either side. Remove and set aside.
- In the same pan, add the geera, coriander and garam masala to the pot. Cook for 1 minute. Add the onions and peppers. Season with a little salt and pepper. Let cook just until the onions are translucent. Mix in the garlic.
- Add the sausages back into the pan with the vegetables.
- Add the diced tomatoes and tomato sauce. Mix well. Stir in the water or stock.
- Let cook over high heat for approximately 5 minutes, then reduce heat, cover and cook for another 10 – 15 minutes. Taste and adjust seasoning if necessary. Serve with rice or pasta.
