GREEN CURRY PASTE ft Nicole Asiu

Ingredients

1 to 3 green chilli peppers or jalapenos (some or all of seeds removed)

1 onion

5 to 6 garlic cloves

1-inch size piece of ginger (thinly sliced)

1 cup cilantro (leaves and stems)

½ cup basil

½ tsp ground cumin

½ tsp white pepper

½ tsp ground coriander

2 tbs fish sauce (optional)

2 tbs lime juice

½ tsp lime zest

1 tsp brown sugar

salt to taste

Directions

  1. Place all ingredients in a high-speed blender and blend until a thick paste is formed. Because there isn’t much liquid you will need to scrape down the sides occasionally. This should give approx. 1 cup of green curry paste.
  2. Any unused portion can be stored in the refrigerator for up to 2 weeks or frozen in ice cube trays.
