3 oz passionfruit cordial

Ingredients for the passion fruit cordial

5 passion fruit, pulp extracted

2 cups sugar

4 cups water

Juice of 1 lime

2 oz rum 

3 oz Guinness stout 

Fresh fruit ( pineapple, apples, mangoes, oranges cut in small chunks)


  1. Prepare your fresh passionfruit cordial by cutting open and extracting fresh pulp, adding to a pot with water, granulated sugar, squeeze of lime. Cook over low heat until the mixture becomes a syrup like texture. (The amount of water would be determined by the amount of pulp extracted. Add sugar based on your sweetness preference and the tartness of the fruit). This may take a couple of hours.
  2. When cordial is finished let cool. You need 3 oz per drink.
  3. Place ice in glasses. Add some fresh fruit.
  4. Add 2 oz rum to each glass, followed by 3 oz of passion fruit cordial. Top with Guinness and serve.
