ICE CREAM COOKIE SANDWICHES

Ingredients

1 tub Creamery Neapolitan Ice Cream

Favourite baked cookies, large size (store bought or homemade)

Toppings:

Chopped nuts

Chocolate Sprinkles

Assorted chopped dried fruit

Directions

  1. Place one of the cookies bottom side up on a plate or sheet pan.
  2. Scoop enough (approx. 2 – 3 scoops) of the Creamery Neapolitan Ice Cream in an even layer on the cookie. Top with another cookie to form a sandwich.
  3. Wrap the cookie in plastic wrap and place in the freezer for at least half hour. Repeat with the remaining cookies and ice cream. Serve and enjoy.
