JERK PEPPERCORN CRUSTED TUNA

Ingredients
1 Tuna fillet (5 oz)
1 tsp Grace Jerk Seasoning
1 tbsp diced Red Onions
2 oz Arugula
1 oz Orange Juice
½ tsp black peppercorns, crushed
Pinch of salt
Oil for frying
Directions
- Place the tuna on a paper towel and remove pat to remove excess water.
- Spread the Grace Jerk Seasoning on the tuna in an even layer on both sides. Mix together the salt and black peppercorns. Sprinkle the mixture evenly on the tuna fillet.
- Heat oil in pan over high heat. Pan sear the tuna on both sides till medium, approximately 2 minutes per side. Remove and let sit for 1 – 2 minutes before slicing and serving.
- Accompaniments:
Braised Onion: Heat a pan over low heat with a little Olive oil and add 1 onion (sliced). Cook over slow flame till very soft. Deglaze with 2 oz orange juice and thyme sprigs. - Tomato Compote: Finely chop 1 Tomato. Add fresh basil, salt, pepper and olive oil.
