LAMB MEATBALL SALAD ft Everald Gally Cummings

Made for Everald Gally Cummings on Cup of Joe Caribbean

Ingredients
FOR THE LAMB:
1 lb minced lamb
1 tbsp green seasoning
(chopped thyme, celery, shadon beni, chive)
3 cloves garlic, chopped
¾ cup Regal Instant Quick Oats
1 egg, lightly beaten
½ tsp salt
½ tsp black pepper
1 tsp pepper sauce (optional)
FOR THE SALAD:
Lettuce, chopped
Sweet pepper slices
Thinly sliced red onion
Tomatoes, diced or quartered
Juice of ½ lime
Salt and pepper
Garlic sauce or creamy dressing of your choice
Cooking spray
Directions
- Place lamb in a large bowl. Add the remaining ingredients. Mix just until all the ingredients are evenly incorporated. Let marinate for ½ hour.
- Form into even sized meatballs and place on a baking sheet lightly sprayed with cooking spray.
- Preheat oven to 375 degrees F.
- Place in preheated oven for approximately 10 - 12 minutes. Depending on the size of the balls the cooking time may be a little more or less. Remove the lamb balls from the oven and let rest for 5 minutes.
- Meanwhile make the salad. Place the lettuce in a large bowl. Season with a little salt and black pepper. Drizzle with lime juice and toss well. Add the onions, peppers and tomatoes and toss gently.
- Place the salad in serving bowls. Top with 3 – 4 lamb balls. Drizzle with dressing of choice and serve.
