LAMB SLIDERS WITH CREAMY MINT DRESSING ft ZAN

Ingredients

For the dressing:

10 – 12 fresh mint leaves

2 – 3 sprigs parsley

2 – 3 tbsp Hellman’s Mayonnaise

2 – 3 cloves garlic

2 tsp plain yogurt

½ tsp salt

½ tsp black pepper

2 tbsp vinegar

For the sliders:

½ lb minced lamb, seasoned (green seasoning, onions, garlic, salt and pepper)

1 egg

½ cup panko breadcrumbs

Mini bread rolls

Lettuce

Tomatoes

Directions

  1. Make the dressing:
    Place the garlic cloves, parsley and mint in a food processor. Pulse until finely chopped.
    Add the Hellman’s Mayonnaise, yogurt, vinegar, salt and black pepper.
    Pulse until well blended. Taste and adjust seasoning if necessary. Set aside.
  2. Make the lamb sliders:
    Add the egg and breadcrumbs to the seasoned lamb and mix just until combined. Form into small patties.
    Heat oil in a large frying pan and cook the patties, approximately 1 – 2 minutes on either side.
  3. Assemble the sliders. Place lettuce on the base of the bun. Top with a lamb slider. Spoon the creamy mint dressing over the slider followed by a slice of tomato and cover with the top of the bun. Serve.
