LAMB SLIDERS WITH CREAMY MINT DRESSING ft ZAN
Made for Zan on Cup of Joe Caribbean
For the dressing:
10 – 12 fresh mint leaves
2 – 3 sprigs parsley
2 – 3 tbsp Hellman’s Mayonnaise
2 – 3 cloves garlic
2 tsp plain yogurt
½ tsp salt
½ tsp black pepper
2 tbsp vinegar
For the sliders:
½ lb minced lamb, seasoned (green seasoning, onions, garlic, salt and pepper)
½ cup panko breadcrumbs
Mini bread rolls
- Make the dressing:
Place the garlic cloves, parsley and mint in a food processor. Pulse until finely chopped.
Add the Hellman’s Mayonnaise, yogurt, vinegar, salt and black pepper.
Pulse until well blended. Taste and adjust seasoning if necessary. Set aside.
- Make the lamb sliders:
Add the egg and breadcrumbs to the seasoned lamb and mix just until combined. Form into small patties.
Heat oil in a large frying pan and cook the patties, approximately 1 – 2 minutes on either side.
- Assemble the sliders. Place lettuce on the base of the bun. Top with a lamb slider. Spoon the creamy mint dressing over the slider followed by a slice of tomato and cover with the top of the bun. Serve.
