MAHI MAHI IN MEDITERRANEAN CREAM SAUCE

Joel makes this delicious main dish for D' Piano Girl, Johanna Chuckaree.

Ingredients
For the fish:
3 – 4 Ocean Delight Mahi Mahi Fish Fillets
1 tsp paprika
1 tsp chili powder
½ tsp cayenne pepper
Salt and black pepper
1 oz butter
1 – 2 tsp olive oil
For the sauce:
1 small onion, peeled and diced
3 – 4 garlic cloves, minced
1¼ cups seafood or chicken broth
½ cup heavy cream
1 tsp chopped parsley
1 tsp green seasoning
½ cup chopped olives
¼ cup crumbled feta cheese
Salt and black pepper
Directions
- Season the Ocean Delight Mahi Mahi Fish Fillets with the spices and a little salt and black pepper. Set aside to marinate for half hour.
- Heat olive oil and butter in a large saute pan over medium high heat.
- Add the seasoned fish in the oil and butter mixture, frying on both sides until the fish is cooked through, approximately 4 – 5 minutes per side. Remove from pan.
- In the same pan, add just a little more olive oil to heat. Add the onions and cook for 1 – 2 mins. Add the garlic and let cook for 1 more minute.
- Add the broth and scrape pan to deglaze (scraping any browned bits while mixing back into the broth).
- Add the lemon juice, green seasoning, cream and a pinch of salt and black pepper. Mix in the chopped olives. Let cook for 1 – 2 minutes. Taste and adjust seasoning if necessary.
- Mix the cornstarch in a little water to dissolve. Add mixture to the sauce, stirring constantly. Sauce will thicken. Add the crumbled feta and continue cooking for just a few more minutes.
- Place the cooked fish back in the sauce, spooning just a little over the top if desired. Let heat through and serve,
