PAN SEARED PORTERHOUSE STEAK

Joel makes these elegant steaks using Linz Porterhouse Steaks from Malabar Farms.

Ingredients

2 Linz Porterhouse steaks

Salt and black pepper

2 – 3 oz butter

2 – 3 fresh rosemary sprigs

2 tbsp oil

Directions

  1. Pat steak dry with paper towels. Season the steak with salt and black pepper. Preheat oven to 400 degrees F.
  2. Heat oil in a large sauté pan over high heat until smoking.
  3. Add the steak to the hot pan and sear for 1 – 2 minutes. Flip onto the other side.
  4. Add the butter and rosemary sprigs. Spoon the melted butter over the steaks while continuing to cook for 1 – 2 minutes.
  5. Place in the oven and finish cooking for 5 minutes or longer depending on the thickness of the steak and desired doneness.
  6. Remove from oven, cover and let rest for a few minutes before slicing and serving.
