Made by Chef Charlene Procope - Delph on Cup of Joe Caribbean


3 cups oatmeal
1/2 cup whole wheat flour
1 tsp baking powder
2 tbsp coconut or olive oil
2 tbsp pear or Apple  juice
1/2 cup honey optional
2 med pear
2 eggs
1 tsp cinnamon
1/2 cup mixed fruit
1/2 cup sultanas


  1. Preheat oven to 350 degrees, line a loaf pan with parchment paper.
  2. Put the oats in a bowl with the honey, pear juice and oil mix and set aside
  3. Quarter core and grate the pear, add to the bowl with the flour, sultanas, baking powder, cinnamon and egg using a wooden spoon
  4. Mix oats into flour mixture spoon the mixture into the loaf pan and bake for 55-60 min. Remove from oven, let rest for about 5 - 10 mins and remove from pan.
