PEAR FRUIT BREAD

Made by Chef Charlene Procope - Delph on Cup of Joe Caribbean
Ingredients
3 cups oatmeal
1/2 cup whole wheat flour
1 tsp baking powder
2 tbsp coconut or olive oil
2 tbsp pear or Apple juice
1/2 cup honey optional
2 med pear
2 eggs
1 tsp cinnamon
1/2 cup mixed fruit
1/2 cup sultanas
Directions
- Preheat oven to 350 degrees, line a loaf pan with parchment paper.
- Put the oats in a bowl with the honey, pear juice and oil mix and set aside
- Quarter core and grate the pear, add to the bowl with the flour, sultanas, baking powder, cinnamon and egg using a wooden spoon
- Mix oats into flour mixture spoon the mixture into the loaf pan and bake for 55-60 min. Remove from oven, let rest for about 5 - 10 mins and remove from pan.
