Plantain Pulled Pork /Chicken Sandwich – Chef Bianca Bianco

Ingredients

2 slightly under-ripe plantains
1 small onion sliced thin
1 tbs. oil
Salt & pepper to taste
3 tbs grated parmesan cheese (opt)
1 leftover roast pork or 1 whole roasted chicken
2 cups Your favorite BBQ sauce
2 tbs. prepared mustard
2 cloves garlic sliced
2 tbs. Fresh sliced chilis
2-3 tbs vinegar

Directions

  1. Boil, bake or roast plantains In the skin, do the knife test to ensure they are cooked.
  2. While they are cooking, saute the onions until lightly golden. Divide into 2 portions.
  3. Mash plantains with a fork and mix in ½ the onions, salt pepper & parmesan if using.
  4. Using a 1/3 cup measure, you should get about 8 portions. Flatten into 3” discs. Set in refrigerator.
  5. Shred roasted chicken or leftover pork and set aside.
  6. In Saute pan add the remaining cooked onions and garlic, saute 2 mins. Add mustard, bbq sauce, chilis, vinegar.
  7. Cook on med for 5 mins adjust the seasoning with salt pepper & brown sugar. Using tablespoons of water you may thin to desired consistency…simmer for 10 min.
  8. Toss with meat to reheat.
  9. In a non stick pan or tawah, lightly brushed with oil, sear the plantain patties on both sides until heated through.
  10. Serve like a burger with the meat filling. You may need a knife & fork!!
