CHRISTMAS SALTFISH RICE (RENDEL RICE) – Rendel Robinson

Ingredients
2 cups Lotus Parboiled Rice
1 cup grated carrots
1 tin whole kernel corn
2 cups diced bell peppers (red and green)
1/4 cup diced pimento pepper
1 tsp grated ginger
1lb salted cod (saltfish)
1 tsp pepper sauce
1/4 cup finely chopped chives
1 tsp of dried thyme
1 tsp grated garlic
2 tbsp olive oil
Salt to taste
Directions
- Cook the Lotus Parboiled Rice and set aside.
- Add olive oil to a hot frying pan. Sauté aromatics (ginger, garlic, pimento peppers, thyme and chives) until fragrant.
- Add carrots and whole corn and sauté for 5 mins.
- Add the saltfish and cooked Lotus Parboiled Rice and mix together with the sauté ingredients until well combined.
- Add pepper sauce and salt to taste.
- Serve hot or at room temperature and enjoy.
