CHRISTMAS SALTFISH RICE (RENDEL RICE) – Rendel Robinson

Ingredients

2 cups Lotus Parboiled Rice

1 cup grated carrots

1 tin whole kernel corn

2 cups diced bell peppers (red and green)

1/4 cup diced pimento pepper

1 tsp grated ginger

1lb salted cod (saltfish)

1 tsp pepper sauce

1/4 cup finely chopped chives

1 tsp of dried thyme

1 tsp grated garlic

2 tbsp olive oil

Salt to taste

Directions

  1. Cook the Lotus Parboiled Rice and set aside.
  2. Add olive oil to a hot frying pan. Sauté aromatics (ginger, garlic, pimento peppers, thyme and chives) until fragrant.
  3. Add carrots and whole corn and sauté for 5 mins.
  4. Add the saltfish and cooked Lotus Parboiled Rice and mix together with the sauté ingredients until well combined.
  5. Add pepper sauce and salt to taste.
  6. Serve hot or at room temperature and enjoy.
