ROASTED CHIMICHURRI PROVISIONS with SALMON ft College Boy Jesse

Joel whips up Roasted Chimichurri Provisions for College Boy Jesse, the International Groovy Soca Monarch 2020.


Ingredients
1 large dasheen, parboiled and peeled
2 sweet potatoes, parboiled and peeled
4 green figs, parboiled and peeled
1 large onion, peeled and chopped
2 cloves garlic, thinly sliced
3 heaping tbsp chimichurri (we used Chef’s Palate by Jason Huggins)
1 tsp red pepper flakes or pepper sauce
1 tbsp Italian seasoning
Salt and black pepper
1 tbsp olive oil
2 (4 oz) skinless salmon fillets, cut into chunks
Directions
- Preheat oven to 400 degrees F. Grease a large baking dish.
- Cut the provisions into chunks and place in a large bowl. Add the onion and garlic.
Season with a little salt and black pepper. Mix in the red pepper flakes or pepper sauce and Italian seasoning.
Add the chimichurri and olive oil and mix well. - Place the provisions in one even layer in the prepared dish. Roast in the preheated oven for 20 – 25 minutes. Remove from the oven.
- Add the salmon chunks among the provisions. Sprinkle with the grated cheddar cheese.
- Place back in the oven for 10 minutes or until the cheese is melted. Remove and serve.
