RUM & RAISIN FRUIT CAKE PARFAIT

Ingredients

1 tub Creamery Novelties Rum and Raisin Ice Cream

Slices of fruit cake

½ cup caramel sauce

2 tbsp rum

½ tsp cinnamon powder

Whipped cream

Extra garnishes: cherries, coloured sugar

Directions

  1. Cut the slices of fruit cake into small cubes. (You can refrigerate the slices before for easier cutting).
  2. Mix together the caramel sauce, rum and cinnamon powder.
  3. When ready to serve, spoon a little of the caramel rum sauce at the base of a martini glass. Add a few of the fruit cake cubes.
  4. Top with a hefty scoop of Creamery Novelties Rum and Raisin Ice Cream. Flatten the scoop a bit and drizzle with some caramel rum sauce. Repeat with another layer of cake, ice cream and sauce.
  5. Garnish with whipped cream and extra toppings as desired. Serve immediately.
