RUM & RAISIN FRUIT CAKE PARFAIT

Ingredients
1 tub Creamery Novelties Rum and Raisin Ice Cream
Slices of fruit cake
½ cup caramel sauce
2 tbsp rum
½ tsp cinnamon powder
Whipped cream
Extra garnishes: cherries, coloured sugar
Directions
- Cut the slices of fruit cake into small cubes. (You can refrigerate the slices before for easier cutting).
- Mix together the caramel sauce, rum and cinnamon powder.
- When ready to serve, spoon a little of the caramel rum sauce at the base of a martini glass. Add a few of the fruit cake cubes.
- Top with a hefty scoop of Creamery Novelties Rum and Raisin Ice Cream. Flatten the scoop a bit and drizzle with some caramel rum sauce. Repeat with another layer of cake, ice cream and sauce.
- Garnish with whipped cream and extra toppings as desired. Serve immediately.
