SALAMI LASAGNA

Ingredients

1 cup of frozen spinach, (thawed, drained in paper towels to remove excess water)

1 1/2 cups of ricotta cheese

1/2 cup grated Parmesan cheese 

3 to 4 cloves of garlic minced

1/2 teaspoon dried oregano

Salt and Black pepper to taste

1 tablespoon of olive oil

1 onion, chopped

2 cups of tomato sauce

1 teaspoon of finely chopped rosemary

2 cups of Great Foods Salami, chopped

8-10 slices of Great Foods Salami

6-8 lasagna noodles, boiled

1 cup cheddar and mozzarella cheese mixed  

Directions

  1. Preheat oven to 375 degrees.
  2. In a medium bowl stir together ricotta cheese, parmesan cheese, spinach, garlic, oregano, salt and pepper and set aside.
  3. Heat olive oil in a pan, saute onions until softened, add garlic cook about a minute, then add chopped salami and cook for a further 2-3 minutes and add tomato sauce, season with salt, pepper and oregano, bring to a boil, lower heat and simmer for 5 to 7 minutes, sprinkle with rosemary. Remove from heat and set aside.
  4. In a greased baking dish spread a spoonful of salami tomato sauce, layer a row of noodles, spread cheese and spinach mixture, toss a few slices of salami and top with a layer of salami tomato sauce.
  5. Repeat the layered process twice, top with cheddar and mozzarella cheese and bake for 30 - 35 minutes and the top is golden brown.
  6. Let stand for 5 minutes before serving.
