SPICY SALMON AND BACON SANDWICH

Ingredients

2 Kiss Healthy Balance Whole Grain Jumbo Buns

1 (4 oz) skinless salmon fillet

Salt and Black Pepper

½ tsp cayenne pepper

3 – 4 strips bacon, cooked (preferably crispy)

4 tbsp mayonnaise

1 tsp minced onion

1 tbsp mustard

½ tsp pepper

Few dashes of Worcestershire sauce

1 tsp green seasoning

2 tbsp oil

Thin slices of red onion

Tomato slices

Directions

  1. Season the salmon fillet with a little salt, black pepper and cayenne pepper. Heat oil over medium high heat in a saute pan. Place the salmon fillet in the hot oil and cook for approximately 2 – 3 minutes. Turn onto the other side and finish cooking, about 2 – 3 minutes more. Using a fork, flake the salmon into small pieces.
  2. Cut the Kiss Healthy Balance Jumbo Buns horizontally in half. Place in a toaster oven and lightly toast the bread. Remove.
  3. Chop the bacon into small pieces. Mix together the mayonnaise, minced onion, mustard, green seasoning, Worcestershire sauce, pepper sauce and a pinch of salt and black pepper. Add the bacon and mix well.
  4. Assemble the sandwich. Spread a little of the bacon cream on both halves of the Kiss Healthy Balance Whole Grain Buns. Top with some of the flaked salmon. Place a few slices of red onion and tomatoes on the salmon. Cover with the top half of the bun. Slice in half and serve.
