SAUSAGE AND POTATO MUFFINS

Ingredients
3 – 4 potatoes, cooked and mashed
2 sausages, (we used Del Mano Italian)
1 medium onion, diced
1 small sweet pepper, seeded and diced
2 – 3 blades shadon beni
1 egg, lightly beaten
½ cup grated mozzarella cheese
½ cup grated cheddar cheese
Salt and black pepper
½ cup breadcrumbs
Extra grated cheese
Olive oil

Directions
- Preheat oven to 400 degrees F. Lightly spray a muffin tin with cooking spray.
- In a bowl mix together the mashed potatoes, grated cheeses and beaten egg. Set aside.
- Heat a little oil in a medium sauté pan. Remove the sausage from the casing. Add the sausage meat to the frying pan and mash into small pieces while frying. Add the onions and sweet pepper. Add the shadon beni and season with a little salt and pepper. Remove from heat.
- Add the sausage mixture to the potato mixture and blend.
- Spoon the mixture into the muffin pans. Top with some breadcrumbs and grated cheese.
- Bake in the preheated oven for 15 – 20 minutes. Remove from the oven and let sit for about 5 minutes before taking out of the pan.
