SIMPLE FRENCH TOAST WITH SAUTEED BANANAS ft COLLEGE BOY JESSE

8 slices Kiss Milk Bread or Whole Wheat Bread
4 large eggs, lightly beaten
1/4 cup evaporated milk or heavy cream
½ tsp vanilla essence
2 tbsp honey
½ tsp cinnamon powder
2 – 3 oz butter
For the bananas:
1 – 2 ripe bananas, peeled and thinly sliced
2 oz butter
Pinch of salt
1 oz rum, optional
- FOR THE FRENCH TOAST
Place the eggs in a shallow dish. Add the milk, cinnamon, vanilla and honey and whisk everything together.
- Melt a little butter in a large skillet over medium high heat.
- Dip the Kiss Bread slices into the egg mixture, turning over onto the other side so both sides are coated.
- Place the bread in batches on the skillet. Cook 1 – 2 minutes on one side or until golden brown and flip onto the other side to finish cooking.
- FOR THE BANANAS
Melt the butter in a sauté pan over medium high heat. Add the bananas, rum and pinch of salt. Cook until the bananas have broken down to an almost sauce like consistency. If the mixture becomes too thick/dry add a little more butter and rum if using. Serve warm with the French toast.
