SPICY EGGPLANT AND TOMATO SAUCE

Ingredients
2 medium eggplants, peeled and diced
1 large sweet pepper, seeded and chopped
1 large can diced or stewed tomatoes
1 tbsp green seasoning
2 – 3 garlic cloves, minced
½ cup salsa
½ tsp pepper sauce, optional
2 tbsp balsamic vinegar
Salt and black pepper
2 tbsp olive oil
Directions
- Heat oil in a large saucepan over medium high heat.
- Add the eggplant and saute for a few minutes until it begins to get golden brown. Add the sweet peppers, green seasoning and garlic. Season with a little salt and pepper. Cook for 1 – 2 more minutes.
- Add the tomatoes, salsa, balsamic vinegar and pepper sauce if using. Add a touch more salt and black pepper. Cover and let cook until mixture is cooked through approximately 10 minutes, stirring occasionally. Taste and adjust seasoning if necessary.
- Serve with fish, rice or in a sandwich.
