SPICY EGGPLANT AND TOMATO SAUCE

Ingredients

2 medium eggplants, peeled and diced

1 large sweet pepper, seeded and chopped

1 large can diced or stewed tomatoes

1 tbsp green seasoning

2 – 3 garlic cloves, minced

½ cup salsa

½ tsp pepper sauce, optional

2 tbsp balsamic vinegar

Salt and black pepper

2 tbsp olive oil

Directions

  1. Heat oil in a large saucepan over medium high heat.
  2. Add the eggplant and saute for a few minutes until it begins to get golden brown. Add the sweet peppers, green seasoning and garlic. Season with a little salt and pepper. Cook for 1 – 2 more minutes.
  3. Add the tomatoes, salsa, balsamic vinegar and pepper sauce if using. Add a touch more salt and black pepper. Cover and let cook until mixture is cooked through approximately 10 minutes, stirring occasionally. Taste and adjust seasoning if necessary.
  4. Serve with fish, rice or in a sandwich.
