3 – 4 Macfoods Deli Select Spanish Sausages

3 – 4 slices Blue Ribbon Bacon

1 medium onion, peeled and diced

3 – 4 cloves garlic, finely chopped

1 large sweet pepper, seeded and diced

1 tbsp green seasoning

1 tsp ground geera or cumin

1 tsp paprika or smoked paprika

1 tsp chilli powder

Salt and black pepper

1 cup tomato sauce

1 cup chicken stock

1 head patchoi, rinsed and chopped

1 (15 oz) can channa/chickpeas drained

2 large tomatoes, chopped

2 – 3 blades shadon beni, chopped


  1. Cook the bacon over a medium high heat in a large saucepan until the bacon fat is rendered and the bacon is crisp. Remove the bacon, chop in smaller pieces and set aside.
  2. In the same pan, add the onions and peppers and cook for 1 – 2 minutes. Add the garlic and the green seasoning and mix into the vegetables.
  3. Add the geera, paprika and chilli powder and mix well. Let cook for a minute. Season with a little salt and pepper. Add the tomato sauce and the chicken stock. Mix everything together.
  4. Slice the sausages along the bias into ½ -inch thick slices. Add to the pot and mix into the sauce. Add the channa, tomatoes and patchoi. Mix well. Stir in the shadon beni. Reduce the heat to low. Cover and cook for approximately 15 minutes or until the vegetables are cooked through and the stew has thickened a little. Taste and adjust seasoning if necessary.
  5. When ready to serve, spoon the stew over some rice or pasta and top with some of the chopped bacon.
