SPICY SKEWERED SHRIMP SNACK – Nessa Preppy


Ingredients
Shrimp:
16 – 20 jumbo shrimp, peeled and deveined
1 tbsp chili powder
1 tsp paprika or smoked paprika
½ tsp cayenne pepper or pepper sauce
Salt and black pepper
Sauce:
½ cup mayonnaise
3 tbsp tamarind sauce
1 tsp ground cumin or geera
Salt and pepper
Oil for grilling/frying
Wooden skewers soaked in some water for ½ hour
Directions
- Season the shrimp with chili powder, cayenne pepper and generous pinches of salt and black pepper. Le marinate for 15 minutes to ½ hour.
- Mix together the ingredients for the creamy tamarind sauce. Taste and adjust seasoning if necessary. Set aside or place in refrigerator if not serving shortly.
- Thread each shrimp onto a soaked skewer, trying to keep them straight on the skewer.
- Place the grill pan or frying pan over high heat and brush or add a little oil.
- Place the shrimp on the hot pan and cook for 2 – 3 minutes per side, depending on the size of the shrimp. When the shrimp are cooked, place on platter and serve with the dipping sauce. A little lime juice can be drizzled on the shrimp just before serving.
