SWEET POTATO HUMMUS & BACON SANDWICH
4 Kiss Hamburger Buns
4 – 6 slices of bacon, cooked
Chopped lettuce of choice
For the hummus:
1 can chickpeas, drained and rinsed
1 medium roasted sweet potato, peeled and chopped
3 cloves garlic
2 -3 blades shadon beni
2 tsp lime juice
Salt and black pepper
½ tsp paprika
Few dashes of pepper sauce
½ cup olive oil
1 small sweet pepper, thinly sliced
1 small onion, thinly sliced
- Make the sweet potato hummus: Place all the ingredients in a food processor. Blend the ingredients in the food processor until well mixed and smooth. Taste and adjust seasonings if necessary.
- Saute the sweet peppers and onions in a frying pan with a little salt and black pepper. You can add a pinch of red pepper flakes if desired.
- Cut the Kiss Hamburger Buns in half and place in a toaster oven cut sides up to toast lightly.
- Assemble the sandwich:
Spread an even layer of the sweet potato hummus on the base of the roll. Place an even layer of bacon over the hummus. Add a little of the sautéed vegetables. Top with a little lettuce. Drizzle with some garlic sauce if using. Cover with the top half of the bun and serve.
