TOMATO & OCHRO BRUSCHETTA


Ingredients
1 loaf Kiss Enriched Butter Bread , cut in thin slices, toasted and halved
5 – 6 medium tomatoes
2 – 3 ochroes ,thinly sliced/chopped
1½ tbsp chopped fresh rosemary
¼ cup balsamic vinegar
Salt and Black pepper
¼ tsp cayenne pepper or pepper sauce
¼ – ½ cup olive oil
4 oz softened cream cheese
Toasted bread slices/rounds
Directions
- Dice the tomatoes and place in a bowl. Season with a little salt and black pepper.
- Saute the ochroes in a little oil with a little salt and pepper. Cook just until tender. Let cool.
- Mix the ochroes into the tomatoes.
- Add the olive oil, balsamic vinegar, rosemary, and pepper sauce or cayenne pepper. Mix well.
- Spread a thin layer of cream cheese on the bread slices. Spoon a little of the tomato mixture on each toasted bread slice and place on serving platter. Serve and enjoy.
