TUNA BREAKFAST PIE

Joel makes this satisfyingly simple breakfast/brunch dish for Mical Teja using Grace Tuna.

Ingredients
2 cans Grace Tuna, drained
5 eggs
3 oz cream cheese
1 small sweet pepper, thinly sliced
½ cup grated carrots
1 small onion, thinly sliced
1 – 2 pimento peppers, diced
1 tbsp green seasoning
Few drops of pepper sauce
2 tbsp chopped chives
3 tbsp oats
½ cup grated cheddar cheese
Salt and black pepper
Extra grated cheese
Directions
- Preheat oven to 350 degrees F. Lightly spray a pie dish with cooking spray.
- Place the cream cheese in a bowl. Lightly beat the eggs, add the green seasoning, pepper sauce and season with a little salt and pepper. Add to the cream cheese and whisk until blended.
- Add the Grace Tuna and oats. Mix well.
- Add the vegetables, chives and cheese. Season with a little more salt and pepper.
- Pour into prepared pie dish, sprinkle with extra grated cheese. Place in preheated oven.
- Bake for 15 – 20 minutes or until the quiche is cooked through. Remove and let sit for 1 minute before slicing and serving.
